New Design Increases Bowl Jacket Strength and Cooling Efficiency
Shaffer’s new bowl cooling design represents a revolutionary way to handle dough forces, while maintaining jacket strength and improving cooling efficiency.
Utilizing Finite Element Analysis (FEA) software Shaffer engineers were able to locate the maximum stress points on bowls with a traditional jacket design versus the new Shaffer bowl jacket design. Analysis of the traditional jacket design revealed that stress from dough forces concentrates near the end of the jacket weld which can lead to fatigue and cracking problems. Shaffer’s new jacket design, however, removes the maximum stress points from the weld seams and thus increases the jacket’s durability and service life.
In addition to increased durability, the Shaffer jacket design creates increased coolant turbulence providing greater heat transfer and thus improved dough cooling.
